Grilled and Griddled Cheese

It sounds like a bit from a 90’s stand-up comedy routine: “Why do they call it grilled cheese when everyone cooks them in a pan?” The name “Grilled Cheese Sandwich” is simply a colloquialism, but we figured we would take the name literally and cook them on the grill. We made them both ways on GrillGrates – grilled and griddled! Not only is this a recipe it can also be considered a technique. We suggest you experiment with the variables at hand: try different breads and cheeses, try different add-ins like meats and fresh vegetables. Try griddling half way through and then finishing on the rails-up side. You really can’t go wrong.
