Directions
Step 1
Using a paring knife make a small slit in the side of each slice of bread, going almost to the other side but not all the way through. Set aside.
Step 2
In a medium bowl whisk together granulated sugar, heavy cream, and vanilla extract. Add in eggs and whisk to combine.
Step 3
Arrange the sliced brioche in a 9x13-inch baking dish. Pour egg mixture over the break, let soak for at least 30 minutes.
Step 4
Remove bread from egg mixture and place directly on rails down grill grate. Grill for 5-7minutes allowing bread to brown, flip and repeat on other side.
Step 5
While toast is cooking prepare filling. In a medium bowl combine the cream cheese and ricotta, beat with mixer until light and fluffy. Gently fold in jam or fresh fruit. Put filling in a piping bag and set aside.
Step 6
Remove bread from grill once browned and allow to cool 2-3 minutes; cool enough to handle.
Step 7
Once able to handle pipe the filling inside the bread via the slit of the bread.
