Susan had recently been away for a week and of course, she wanted a steak for dinner when she got home. Lucky for us our local Kroger has been well supplied with Tomahawk ribeyes and they were prime no less! This baby got the royal treatment. An hour or so on the Yoder Smoker then a hot and fast sear on the Weber Gasser. The Ruth’s Chris Kiss finished off the perfect sear with a bit of char.

Directions
Step 1
Set up a pellet grill (or charcoal grill or gas grill) to LOW. 225-250F
Step 2
Let the Tomahawk rest out of the refrigerator for up to an hour
Step 3
Season with Boar’s Night Out- White Lightning
Step 4
Just before putting it on to roast dust with Johnny Joseph’s Steak Rub
Step 5
Thick Tomahawks will roast for an hour or more. Turn 1-2X during the cook. Goal temp (for Med Rare finish) is approx 120F
Step 6
Pull the Tomahawk and tent on a cutting board or immediately take it to another grill that is screaming hot. I used my trusty Weber Gasser since we had all the smoke we needed from the Pellet grill.
Step 7
The goal is to sear on the rails for 1 min then rotate. Flip and sear on 2nd side.
Step 8
TEMP- if you are close to 125 F. Move it to a Flat Side UP GrillGrate Panel. Sear for 30-45 seconds per side.
Step 9
Pull 125F and let rest 10 minutes on a cutting board.

Your Weber Spirit IS a smoker with that pouch and one burner on low / low. Lots of time I only have one grill to work with it just means tenting the meat for a few minutes while you ramp up the Weber. I suggest NO GrillGrates on the slow roast as they will amp the cook even at low low. Get the smoker pouch going and slow roast away.
