For anyone looking for a light, refreshing side that can be whipped up in minutes - this Grilled Watermelon and Blue Cheese Salad is perfect. Works great for an on-theme 4th July menu too!

Watermelon

Heath Riles Apple Rub

Balsamic Glaze

Blue cheese, crumbled

Directions

Step 1

Slice the watermelon into ½-inch thick triangles, leaving the rind attached.

Step 2

Sprinkle Heath Riles Apple Rub onto both sides of your Watermelon slices.

Step 3

Arrange the slices onto your GrillGrates (rails UP) in one single layer and grill over high direct heat for up to 3 minutes on both sides, until grill marks appear.

Step 4

Arrange your grilled watermelon slices onto a platter for family style serving, or on individual plates. Sprinkle on your blue cheese, drizzle lightly with balsamic vinegar, serve, and enjoy!
