Salmon and Shrimp Sliders with Spicy Kimchi Slaw

A great little appetizer or light meal, these salmon sliders are packed full of unique flavors from the east.
Ingredients

For the sliders
1.5 lbs. of fresh salmon, pin bones removed and skinned
.5 lbs. fresh shrimp, peeled and deveined
2 tablespoons chopped fresh cilantro
3 green onions, sliced thin
½ tablespoon minced fresh ginger
½ tablespoon minced fresh garlic
1 tablespoon ground coriander seed
1 small fresh jalapeno, seeded and minced
2 tablespoons chili garlic sauce (found in the Asian section of your supermarket)
4 tablespoons soy sauce
Zest and juice of 1 lime
1 teaspoon fresh ground black pepper
12 slider buns
For the Kimchi Slaw
.5 lbs spicy kimchi (found near refrigerated sauerkraut )
4 cups thinly sliced red cabbage
1 cup Mexican crema or sour cream
Zest and juice of 2 limes
2 tablespoons chopped fresh cilantro
Directions
Step 1
Cut the salmon into approximately 1-inch cubes. Cut the shrimp up into small pieces. Place in a large bowl and add all the other ingredients. Using your hands mix everything together so the seafood is coated with all the flavorings and aromatics. Allow to marinate for 5-10 minutes in the refrigerator.
Step 2
Using a meat grinder set up with a medium plate grind all the mixture together into a bowl. If you do not have a meat grinder you can use a food processor just be careful to not over process. You want it to have some texture and not be a fine paste. Refrigerate until ready to cook.
Step 3
Place all the ingredients for the slaw into a large bowl and mix thoroughly. Allow to sit at room temperature until ready to use.
Step 4
Preheat your grill with the Grate Griddle in place until the griddle is approximately 500f.
Step 5
Form the salmon mixture in 2.5-3-ounce patties. Coat the griddle with a light coat of oil and place the salmon patties onto the griddle. After about 3 minutes check to see if the patties have browned on the bottom and then flip. Cook for another 2-3 minutes and then remove to tray or platter. Cover with foil.
Step 6
Toast the slider buns to golden brown.
